Sales tax on online orders is worked out for where each order goes, by Stripe Tax on your own Stripe account. Turn on Stripe Tax and add where you're registered to collect tax, in your Stripe dashboard. Stripe charges you 50 cents for each order it works out tax for, only where you're registered to collect tax (see Stripe Tax pricing; Stripe can change it). Until you turn it on, each product's own tax setting is used. Shipping is taxed where it's taxable.
